Perfectly cooked juicy burgers topped with blue cheese crumbles and frizzled onions placed on lettuce sitting on toasted buns with honey spicy sriracha sauce slathered on the bottom bun. This flavorful recipe is the ultimate sriracha burger to add to your grilling menu.
These delicious burgers are perfectly to add to your summer grilling menu. They are great to serve at Memorial Day, July 4th or Labor Day barbecues, especially if your guests love food with a little spice. They are also a fun recipe to make inside during the Winter months using a grill pan or cast iron skillet if you are craving those summer flavors around the holidays.
This was inspired by my Smashburgers with Smoky Sauce on this site, and pairs well with this BBQ Grilled Bacon Wrapped Jalapeno Poppers.

- Sriracha sauce
- honey
- crispy fried onions
- ice burg lettuce

See recipe card for quantities.
Instructions
Pack the ground beef into equal sized burger patties using your hands. Season both sides of the patty with salt and black pepper. Heat up the grill.
Cook your burgers on medium heat on the grill for about 3 minutes. After three minutes quarter turn the burgers. After another three minutes, flip the burger and repeat. After quarter turning the burgers once flipped, add blue cheese crumbles to the top of each patty.
Coat both sides of the brioche bun with mayonnaise. Place either on the top rack of the grill to toast about 3-5 minutes. Mix together honey and sriracha.
Spread honey sriracha sauce on top bun. Place a layer of lettuce on the bottom bun. Add the burger and top with some extra blue cheese if desired. Add the crispy fried onions and top with the top bun. Serve immediately.
Hint: for a medium rare burger, cook the burgers until they reach about 135 degrees internal temperature. Use an instant read meat thermometer to take the temperature.
Substitutions
- Lettuce - instead of ice berg lettuce, you can use arugula. Add pepper and olive oil for a peppery arugula
- Bun - use gluten free buns instead of brioche buns to make this gluten free
- Vegetarian - the beef hamburger can be replaced with a plant-based burger to make this vegetarian
Variations
- Caramelized Onions - add caramelized onions instead of crispy fried onions to change up the recipe
- Big Mac - add big mac sauce, red onion, tomato and replace the blue cheese with cheddar cheese for a fun burger variation
- Kid friendly - add sriracha mayo for a little less heat

Equipment
To make this recipe, use a gas grill or a charcoal grill. If access to a grill is not possible, use a cast iron skillet or a grill pan and cook the burgers inside. You will also need a small bowl to mix the honey sriracha sauce. It is also helpful to place the ground beef in a large bowl while forming the burgers.
Storage
Store the wet ingredients (lettuce, cheese, burger buns) separately from the dry ingredients (buns, frizzled onions) in the fridge, and recombine when ready. Good for 2-3 days. Honey sriracha sauce can be saved in an airtight container and placed in the fridge.
These ingredients do stand up well to freezing prior to cooking for up to 2 months.
Top tip
If cooking to a medium rare temperature, remove the burgers once they reach an internal temp between 125 and 130 degrees. Once removed from the grill grates, the burger will continue to heat up internally and will assure you reach a perfect medium rare temperature between 130 and 135 degrees.
FAQ
For this recipe, either use a large sweet onion or a large yellow onion if making the frizzled onions from scratch. You can also buy the crispy onions that can be found in the canned vegetable aisle.
Use either blue cheese dressing or replace with a cheese such as swiss cheese.
